A touch of spring in the dead of winter

Fargo, N.D. (WDAY TV) -We are all looking for some kind of spring.

And near Battle Lake, Minn., two sustainable ag producers are capturing the sun during our sub-zero sun, to grow food all winter long.

Walking into this "deep winter greenhouse", it felt more like a summer day at the lake.

Rich and lush vegetables growing in a warm, humid sun drenched plant growing machine.

Sue, Wika, Paradox Farms: “This is the place to be. I say one of the primary functions of the structure is theraputic, soul lifting.”

There is lettuce, mustard, turnips. Eaten year round.

Wika: “I check it every day.”

Wika and Tom Prieve are sustainable agriculture educators but they also practice what they preach.

Wika: “Right here is a planter of red giant mustard, lots of different colors.You're eating a rainbow at all times.”

Putting up these deep winter greenhouse. No artificial lights. Just sun and a little technology.

Tom Prieve, Paradox Farms: “Have these black pipes running up to the ceiling, where it's about 90-95 degrees, and these simple little duct fans are forcing the air down into the rock layer, and heating it.”

And it's not just humans benefitting from these tasty treats. Barely fodder is raised for the couple's livestock.

Sheep and other livestock love the barley fodder. And it helps complete the cycle of sunlight making plants grow that feed the animals that help make butter, cream and meat for the couple and customers.

Prieve: “The sun the heat the satisfaction, seeing this stuff in January.”

Here at Paradox Farm, the so called Reality Greenhouse hosts recycled gutters host the dirt and seeds suspended in the air, soon to be a salad of green, in the heart of a long, cold winter.

Tom and Sue are sustainable ag educators and often hold classes at their farm.
