Oxbow, ND (WDAY TV)-- An Oxbow girl's healthy cooking skills are taking her all the way to the White House.
8-year-old Charli McQuillan will attend a kids' State Dinner hosted by the First Lady next week.
8-year-old Charli McQuillan likes to cook and bake, after all, the payoff is pretty sweet.
"You get to eat it!"
But the payoff from this dish may just trump anything she's made before.
After hearing about a recipe challenge from the White House, Charli and her mother Heidi decided to give it a shot.
It took a lot of testing and tasting to come up with their healthy Asian Fajitas.
"We think it's pretty easy, right Charli?" "Yep."
Now, that recipe has earned them a trip to Washington, D.C.
July 9th, Charli and Heidi will join First Lady Michelle Obama for a kids' state dinner at the White House.
54 kids across the U.S. won the honor after creating healthy lunch recipes.
When Charli found out she was one of them, she could hardly contain her excitement.
Charli Mcquillan- Healthy Lunch Challenge Winner: "I was about to scream, but then I didn't because my mom doesn't really like when I scream."
Heidi Mcquillan- Charli's Mother: "I just think it's a once-in-a-lifetime opportunity. I think that someday she'll really understand what a big deal it is."
The challenge was to make a dish that's mostly fruits and vegetables, with a lean source of protein, and a healthy source of fat.
Charli: "There is a lot of peppers and vegetables in there."
Add whole wheat tortillas, cabbage, and toasted almonds and the result is a winning combination of flavor and nutrition.
Heidi: "It was a lot of work, but it was worth it."
