WILLISTON, N.D. (AP) — Food truck operators who serve Williston's oil field workers are preparing for a city ban on their operations.
Starting Jan. 1, mobile restaurants will be prohibited in Williston, except for coffee kiosks.
Williston Mayor Ward Koeser says the ban is part of a city attempt to encourage more permanent development.
One of the affected businesses is the Big Iron Kitchen. It's run by Ernie and Jo Bingham from Bainville, Mont. They've been operating from the parking lot of a bar for the past 17 months.
Jo Bingham says they've begun planning to build a permanent location at the bar. But she tells The Forum newspaper that it's "heart-wrenching to think that we have to move."
